Balthazar Beet Salad Recipe
This Balthazar Beet Salad Recipe brings together roasted beets, goat cheese, and walnuts for a delightful flavor combination. The tangy vinaigrette elevates the dish, making it a refreshing and satisfying option for lunch or dinner. It’s quick to prepare yet elegant enough for special occasions. Ingredients
- 4 medium beets about 450 gm
- 60 gm goat cheese crumbled
- 50 gm walnuts toasted
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp honey
- 1 tsp Dijon mustard
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp fresh parsley chopped (optional)
- A handful of arugula optional
Instructions
- Preheat the oven to 200°C.
- Wash and trim the beets, leaving about 2 inches of the stem. Wrap each beet in foil.
- Roast the beets in the oven for 45 minutes or until tender.
- Allow the beets to cool slightly, then peel and slice them into thin rounds.
- In a small bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper to make the vinaigrette.
- Arrange the beet slices on a plate, drizzle with the vinaigrette, and sprinkle crumbled goat cheese and toasted walnuts on top.
- Garnish with fresh parsley and optional arugula if desired.
- Serve immediately and enjoy!
