Ingredients
  

  • 5 lb Beef Brisket flat cut
  • 2 Tablespoons Olive Oil
  • 4 Garlic Cloves minced
  • 2 Tablespoons Brown Sugar
  • 1 Tablespoon Dijon Mustard
  • 1 Tablespoon Worcestershire Sauce
  • 1 Teaspoon Salt
  • ½ Teaspoon Black Pepper
  • 2 Teaspoons Dried Rosemary
  • ½ Teaspoon Ground Paprika
  • ½ Cup Beef Broth
  • ¼ Cup Red Wine optional
  • 1 Large Onion sliced
  • 1-2 Sprigs Fresh Rosemary for garnish

Instructions
 

  • Preheat your oven to 300°F (150°C).
  • Pat dry the brisket with paper towels, then rub it with olive oil.
  • In a small bowl, combine minced garlic, brown sugar, Dijon mustard, Worcestershire sauce, salt, pepper, rosemary, and paprika. Mix into a paste.
  • Rub the seasoning paste all over the brisket, coating it evenly.
  • Place the brisket on a rack in a roasting pan. Arrange sliced onions around the brisket.
  • Pour beef broth and red wine (if using) into the bottom of the pan, making sure not to pour directly on the brisket.
  • Cover the pan with foil and roast for 3 hours, basting the brisket with the pan juices every hour.
  • Check the brisket’s internal temperature after 3 hours. It should reach about 190°F (88°C) for optimal tenderness. If it’s not quite done, return to the oven for another 30 minutes.
  • Remove from the oven and let the brisket rest, covered, for 10-15 minutes before slicing.
  • Garnish with fresh rosemary and serve with your favorite sides.

  • For extra flavor, you can marinate the brisket in the seasoning paste overnight before roasting. This will help the flavors penetrate the meat.
