French Chestnut Soup Recipe
Ingredients
- 1 lb Chestnuts peeled
- 1 tbsp Olive Oil
- 1 Onion chopped
- 2 Garlic Cloves minced
- 4 Cups Chicken Broth
- ½ Cup Heavy Cream
- 1 tsp Thyme dried
- Salt and Pepper to taste
- 2 tbsp Butter

- Fresh Cream
- Chopped Parsley
Instructions
- Preheat your oven to 375°F (190°C). Roast the chestnuts for about 20 minutes, or until the skins split open. Let them cool slightly and peel them.
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, cooking until softened and fragrant (about 5 minutes).
- Add the roasted chestnuts to the pot, followed by chicken broth and thyme. Bring to a boil and then let it simmer for about 15 minutes.
- Once the chestnuts are tender, remove the soup from heat. Use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup to a blender in batches and blend.
- Return the soup to the stove, and stir in the heavy cream and butter. Season with salt and pepper to taste.
- Simmer for 5 more minutes. Serve hot, garnished with optional fresh cream and chopped parsley.
