Ingredients
  

  • 1 lb Chestnuts peeled
  • 1 tbsp Olive Oil
  • 1 Onion chopped
  • 2 Garlic Cloves minced
  • 4 Cups Chicken Broth
  • ½ Cup Heavy Cream
  • 1 tsp Thyme dried
  • Salt and Pepper to taste
  • 2 tbsp Butter

  • Fresh Cream
  • Chopped Parsley

Instructions
 

  • Preheat your oven to 375°F (190°C). Roast the chestnuts for about 20 minutes, or until the skins split open. Let them cool slightly and peel them.
  • In a large pot, heat the olive oil over medium heat. Add the onion and garlic, cooking until softened and fragrant (about 5 minutes).
  • Add the roasted chestnuts to the pot, followed by chicken broth and thyme. Bring to a boil and then let it simmer for about 15 minutes.
  • Once the chestnuts are tender, remove the soup from heat. Use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup to a blender in batches and blend.
  • Return the soup to the stove, and stir in the heavy cream and butter. Season with salt and pepper to taste.
  • Simmer for 5 more minutes. Serve hot, garnished with optional fresh cream and chopped parsley.
