  • 200 gm all-purpose flour
  • 200 gm sugar
  • 100 gm unsalted butter softened
  • 3 large eggs
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • 120 ml whole milk

Optional Toppings

  • Powdered sugar for dusting
  • Lemon slices for garnish

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease two 8-inch round cake pans.
  • In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition.
  • Mix in the lemon zest, lemon juice, and vanilla extract.
  • Sift together the flour, baking powder, and salt, then gradually add the dry ingredients to the wet mixture.
  • Add the milk slowly, mixing until the batter is smooth.
  • Divide the batter evenly between the two prepared cake pans.
  • Bake in the preheated oven for 30-35 minutes or until a toothpick comes out clean.
  • Let the cakes cool in the pans for 10 minutes, then transfer them to a cooling rack to cool completely.
  • Once cooled, dust the top of the cakes with powdered sugar. Optional: garnish with lemon slices for a fresh, zesty touch.
