Spicy Tomato Carbonara
This Spicy Tomato Carbonara combines creamy pasta with zesty tomato sauce and a spicy kick. It’s an elevated twist on the classic, perfect for dinner parties or a cozy meal.
Ingredients
- 200 gm spaghetti
- 4 oz bacon diced
- 2 cloves garlic minced
- 1 cup tomato sauce
- 2 egg yolks
- 50 gm Parmesan cheese grated
- 1 tsp chili flakes
- Salt to taste
- Pepper to taste
- 1 tbsp olive oil
- Fresh parsley chopped (optional for garnish)
Instructions
- Cook spaghetti according to package instructions. Reserve ½ cup of pasta water before draining.
- In a large pan, heat olive oil over medium heat. Add diced bacon and cook until crispy. Remove and set aside.
- In the same pan, sauté minced garlic until fragrant. Add tomato sauce and chili flakes. Simmer for 5 minutes.
- In a small bowl, whisk together egg yolks and grated Parmesan cheese.
- Add cooked spaghetti to the tomato sauce. Toss to coat. Gradually mix in the egg yolk mixture, stirring continuously to create a creamy sauce. Add reserved pasta water if needed.
- Stir in the crispy bacon and season with salt and pepper to taste.
- Serve hot, garnished with parsley and extra Parmesan if desired.
