Ingredients
  

  • 200 gm spaghetti
  • 4 oz bacon diced
  • 2 cloves garlic minced
  • 1 cup tomato sauce
  • 2 egg yolks
  • 50 gm Parmesan cheese grated
  • 1 tsp chili flakes
  • Salt to taste
  • Pepper to taste
  • 1 tbsp olive oil
  • Fresh parsley chopped (optional for garnish)

Instructions
 

  • Cook spaghetti according to package instructions. Reserve ½ cup of pasta water before draining.
  • In a large pan, heat olive oil over medium heat. Add diced bacon and cook until crispy. Remove and set aside.
  • In the same pan, sauté minced garlic until fragrant. Add tomato sauce and chili flakes. Simmer for 5 minutes.
  • In a small bowl, whisk together egg yolks and grated Parmesan cheese.
  • Add cooked spaghetti to the tomato sauce. Toss to coat. Gradually mix in the egg yolk mixture, stirring continuously to create a creamy sauce. Add reserved pasta water if needed.
  • Stir in the crispy bacon and season with salt and pepper to taste.
  • Serve hot, garnished with parsley and extra Parmesan if desired.

Notes

  • For extra creaminess, whisk in a splash of heavy cream along with the egg yolks.
  • If you prefer less spice, reduce the chili flakes or omit them entirely.
  • To make this dish vegetarian, substitute the bacon with sautéed mushrooms or smoked tofu.
  • Serve immediately, as the sauce thickens as it cools. Pair with a side of garlic bread or a light salad for a complete meal.
